Raw Orange Chocolate Segment Cake





I was in the kitchen ready to make some mini carrot cup cakes when I noticed on the bench a large bowl of oranges. I had bought a 5kg bag of navel oranges from the fresh food markets the week before and even though both Dave and I had been eating them there where  still quite a few left.

I made up my mind to leave the cup cakes and do something with the oranges. I was still not quiet sure what I would do but ended up with this orange chocolate segment cake and was really surprised how it turned out and highly recommend this cake.

It takes a wee while to make because you have to wait for the layers to set, but I found you only had to wait about 1hr, so really worth it in the long run....

Crust
11/2 cups macadamia nuts
1/2 cup coconut
1/2 cup pecan nuts
3/4 cup medjool dates pitted
1/8 tsp salt 






In food processor process all ingredients together until mixture comes together
you may need to add very small amount of water
then once mixture starts to stick together press your crust into your prepared spring form tin and set into the freezer

Orange Filling
11/4 cups cashews soaked for 2 hrs
3/4 cup orange juice
1/2 cup coconut milk 
1/2 cup coconut nectar or sweetener of your choice

3 tsps vanilla
2 tbsp orange zest 

2 tbsps lecithin powder
1/4 cup cacao butter melted
1/4 cup coconut oil melted

Now blend all ingredients together except cocao butter and lecithin until smooth 
then add last two ingredients and blend until mixed through,do not over blend
add half mixture to top of crust and put back in the freezer

Chocolate Filling
11/2 cups cashews soaked 2 hrs 
1/2 cup almond milk
1/4 cup maple syrup
1 tbsp vanilla
1/4 cup cacao powder
11/2 tbsp lecithin powder
1/4 cup melted cacao butter 
Now blend all ingredients together until smooth
Do not over blend

 When orange layer is firm pour
 on your chocolate layer and put back in freezer
once that layer is firm place the last of your orange layer on top

Once set decorate as you wish,I used orange segments and had some raw chocolate.
